The bricks are a "family" of French cheeses , made near Puy-en-Velay. These are cheeses made from sheep's, goat's or cow's milk, with a soft, bloomy rind.
By tradition, the cheeses are molded by hand, supple creamy, matured, the aromas of sheep's milk develop over time.
