Kobayashi Sake Brewery can be found 45 kilometres east from Sapporo. Here, the “Kita No Nishiki”, a famous sake that derives its name from a Japanese proverb that captures a return to one’s hometown in glory, is brewed. Brewers here believe that Ginjo and Daiginjo are works of art which truly embody the Japanese spirit, and accordingly, dedicate themselves to their production at the highest level. It is because of their commitment that their jizake brewery is recognised as one of Japan’s best.
This Houou Biden Junmai Ginjo is gentle, sweet, and complex. It has a gorgeous aroma that is rich and full of umami and flavour.
